He had to turn around to let us out as there was no way he would drive through that gate with all of us on a bus, watching at him and noticing every move. That's how we arrived at Pazo de Toubes, a hidden gem somewhere up in the mountains in Ribeiro. As we got on the bus, they said it would be very special, yet we imagine a special difference, especially not knowing what to expect. And then, I stepped off the bus to walk towards that winery and restaurant. A small fountain greeted us and rose bushes blooming in October made the air smell sweeter than usual. There was a stream in front of the actual winery where we spent several hours tasting wines and nibbling on tapas, like jamon, chorizo, empanada, cheese, and a simple tortilla. 

This place, like some others in the region, is a mixture of old and new architecture. Traditional and new foods. Wines made with respect for tradition but working with modern technologies. When the sparkling wine popped open and slowly poured into my glass, it was a matter of time before I knew I would come back here someday, bringing my husband with me and making him crave those small roads, admiring the views in the meantime. The winemaker's passion, stories, and knowledge got me closer, step-by-step, to understanding regional wines and appreciating their work. 

I left the tasting room earlier to wander around the property because no matter where you looked, it was just so special. So authentic, yet so modern. So unique and yet so in fashion. So natural and beautiful. Getting back on the bus, I took one last glance at Pazo de Taubes to remember where I had just been and where I would return someday.
