Spring salad
Ingredients
260 g Little Gem lettuce
16 small pickled gherkins, halved the long way
1 ripe avocado, cubed
4 tbsp extra virgin olive oil
chives, basil, rucola sprouts, parley – for serving
tahini (see recipe on p.)
sea salt to taste
freshly ground black pepper to taste
Prepare
Separate the lettuce by leaves. Arrange on a serving dish with cucumbers and avocado. Drizzle some oil and tahini on top and sprinkle with the herbs you desire and salt and pepper. Serve.
