Classic tiramisu
This supposedly is a classic tiramisu recipe, but I fear saying this, because some might say that the order of preparation may be wrong – when to whip the eggs with sugar, some use sweet cream, others don’t. But this is still one of the classic tiramisu recipes.
Ingredients
300 ml espresso
30 ml amaretto or maraschino liquor
500 g mascarpone
120 g maple syrup
3 medium organic or free range egg yolks*
200 g lady finger cookies
cacao powder for decorating
decoration:
maraschino cherries or sweet cherries
Prepare
In a bowl, mix the amarettoor maraschino liquor with coffee. In a separate bowl, whip the mascarpone with maple syrup until creamy. Add 1 egg yolk and whip 1 minute until the mixture is creamy.
On the base of the serving bowl, spread a bit of the cream. Soak the cookies in coffee and arrange on the cream. Spread a layer of cream and place another layer of coffee-soaked cookies on top. Spread with cream again, and if you have enough cookies, add another layer of cookies ending with a layer of cream. Sprinkle cacao powder on top and refrigerate for at least 4 h to let the flavours meld. Before serving, decorate with cherries.
* Use only the freshest eggs – if you have any doubts, don’t use them.
