Mango and white chocolate truffles
I thought for a long time about what to make with Seeberger mangoes, which we always, always, always eat the same way. At one point it seemed that I would not make anything because, to be honest, its taste is so good that I didn't want to add it to anything. However ... However, there was one combination that did not leave me in peace - white chocolate and mango. And it must be said that it is divine. Try these. And enjoy straight from the fridge.
truffles:
155 g white chocolate
75 g butter
60 g sweet cream
300 g dried mango*
vanilla powder to taste
pinch of salt
top layer:
ground Seeberger walnuts or pistachios
Pour 3 cm of water into a pot. Place butter, chocolate, and cream in a bowl that sits on top of the pot but does not touch the water. Heat, stirring occasionally, until everything is melted. Remove from heat and cool.
Meanwhile, finely chop the mango. Or, if you have a meat grinder, pass it through the meat grinder, which will give a great texture. Stir in the chocolate and put in the fridge to harden slightly. When it hardens enough, make balls (you will have to wait a few hours). Pour the nuts into a dish, put the balls in, and roll them around to cover.
* This is a recipe I developed form Seeberger, so I use their mango, that we absolutely love.
