Strawberry cardamom and vanilla jam
My favorite - vanilla and strawberries, a touch of cardamom and roses. Perfect on a baguette with butter or clotted cream.
300 g golden caster sugar
7 g organic pectin
700 g strawberries (not the sweetest)
1 lemon juice
1 vanilla pod, cut open
7 cardamom pods, seeds crushed
1 tbsp dried rose petals
pinch of salt
Mix sugar with pectin and only afterward with strawberries. Add lemon juice. Leave for 1h.
Prepare jars.
Put the strawberry mixture in a large pot, add spices, and gently heat until sugar dissolves. Turn the heat to the highest and boil for two minutes (skimming off the foam). Take off the heat and leave to rest for 5-10 minutes and pour into sterilized jars.
