Apricot and peach lemonade

Apricot and peach lemonade

That Sunday was a very special day at our house - Father's Day and Paula's dance competition. But, since IT WAS Sunday and all the shops were closed, there was no way to get lemonade, which is obligatory at our house at celebrations.

250 g pitted apricots and peaches (50/50)
270 ml water
125 g golden brown sugar
pinch of salt
sparkling water (we use Vals)
fresh lemon juice

Put fruit, sugar, and salt in a pan. Pour over the water and boil for 15 minutes. Turn off the heat and leave to cool – this is when the tastes continue to marry. When cool, pour the contents into a strainer leaving it to drain by itself – do not press or the syrup will be cloudy. Pour in a bigger pitcher, add lemon juice (to your liking), sparkling water, and mix. Put ice in glasses, pour in the lemonade, and serve.
