Appetizer nuts
It is that magical moment when you sit down at the table after a long day, no matter if it was a workday or just a holiday, and you are served a cocktail and a bowl of these nuts. You can sit with that for hours, chatting with the other person you have invited.
30 g egg whites
30 g golden sugar
30 g brown sugar
330 g macadamia, roasted hazelnuts, and pecans
1 tbsp chopped rosemary
1 Ras el hanout
1/2 tsp salt
Heat the oven to 170°. Line a pan with baking paper.
In a bowl with a hand whisk, whisk the egg whites just a bit. Mix with the rest of the ingredients and spread on the pan. Bake for 25-30 minutes, mixing after the 15 minutes, checking when ready, and rotating the pan if necessary. Take out and transfer the nuts with baking paper to a cooling rack to cool completely. Serve.
