I've already praised Brasserie Dubillot, but let me tell you about its smaller (or maybe even bigger brother) - Bellanger. It is a place you can taste Paris. That being said, the topic is closed, yet let me tell you more. Bellanger, located in the 10th arr in Paris, is a classic Parisian brasserie but very distinctive from others on other street corners. This one serves local seasonal food, respecting not only producers but also terroir and French classics by preparing them in the best possible way.

Even the most straightforward dish of cheese served with salad tastes exceptional here: the cheese is good and the dressing, the king of all French cuisine, is perfect. They serve breakfast, lunch, dinner, and pastries during the day (along with drinks). There are simple things such as sardines in olive oil, Copeaux de Comté AOP (cheese), saucisson truffé (truffle sausage), Œuf Mayo (eggs and mayonnaise), escargot (snails), and tapenade as well as heartier dishes such as their famous tartar, sausage with potato puree, peche du moment (fish of the day), and much more. And as for dessert, there is only one option for me - their hearty, hazelnut, and crunchy Paris-Brest. I like to go there or to their sister shop Brasserie Dubillot just for that.
