I remember the day I experienced Champagne Novack during a caviar dinner I organized. Noble Wine had received a new champagne they wanted to serve, and thank God for that, as I fell in love with their label the moment I saw it and the champagne the moment it touched my lips. It was refined and exquisite, yet so natural. They have been in the Champagne region since 1795 when Jean-Baptiste Nowack arrived from Bohemia and settled in the Marne Valley in Vandièrest (that means to give wine). Manufacturing bricks, roof tiles, and fountain pipework was their primary business, and a small vineyard was just a side experiment. It was Ferdinand who changed the path of the family, completely turning away from everything else to champagne, suffering the phylloxera crisis at the start of his champagne career, and successfully rising up years later. Ferdinand made the family shine those days, winning awards for wines that he produced solely from Pinot Meunier grapes. Made with natural yeasts and 100% Pinot Meunier grapes, this wine has been aged in small oak barrels and is both unfiltered and unrefined. This is generous champagne made from vines planted at the beginning of 1980s.
