100% summer salad
Nothing says ‘Summer’ more than a salad that combines everything juicy, sweet, fresh... Heavenly and so easy to prepare. This salad is great to bring to a potluck. Fresh, filling, summery.
Ingredients
120 g small romaine salad head, leaves separated
4 ripe peaches, torn into pieces
4 ripe figs, torn into pieces
4 mealy, ripe tomatoes, torn into pieces
8 slices prosciutto
16 g creamy Gorgonzola cheese, cubed
8 tbsp mild extra virgin olive oil or hazelnut oil
4 tbsp balsamic cream or aged balsamic vinegar
handful of mint leaves
sea salt to taste
freshly-ground Tellicherry pepper to taste
Prepare
Place the lettuce leaves in a serving dish and arrange the other ingredients on top, creating a wonderful disorder. Top the salad with oil and balsamic vinegar, sprinkle with mint, and season with salt and pepper. Serve.
