Cucumber and coconut salad
This salad is so simple, both in preparation and also in taste. It will pair beautifully with many dishes and is a great base for a lovely summer lunch.
Ingredients
300 g small cucumbers, skin on, halved lengthwise
60 g fresh coconut, thinly sliced
large handful of mint
large handful of basil
1 lime zest, finely grated
20‒30 ml sesame or peanut oil
50 g small, juicy lettuce leaves
Ingredients
Mix all ingredients in a bowl and serve on its own or as a side dish.
