Klaudija’s melon

I tasted this dish for the first time while visiting friends in Paris. It is so simple, so unique, so fresh. Only the ripe Charentais melon (Klaudija hails from southern France and this is the only choice – beautiful, honey-flavoured melon), port, and brown sugar are needed. And chilling, which does wonders. It’s the premier summer time snack. For kids, omit the port.

Ingredients

2 small melons
8 tbsp port wine
4 tbsp Demerara sugar

Prepare

Trim the ends of the melon just enough to have it stand straight on the table. Cut in half, remove the seeds, stab in a few places, pour on the port, and sprinkle with sugar. Transfer to a covered dish in the fridge and let sit 4 h our more to soak in and chill. Serve a half to each person with a spoon.
