In a pan, heat olive oil - 1- 2 tbsp, and when hot, add carrots, placing them cut the side down. I use medium/small carrots, so I cut them in half. Fry in medium heat for 10 minutes. Slowly, as you do not want carrots to burn. After 10 minutes, add 1 sprig of oregano or thyme and tarragon. You can add just one of those. In the recipe in the picture, I added oregano and tarragon. Add some chopped chilies and salt, and continue cooking. Turn the carrots one time, frying for some minutes, and then back cut side down again. It takes around 20 minutes to fry them slowly.

When ready, add to the plate and top with fresh goat cheese, chopped roasted hazelnuts, basil, and peppermint leaves. Serve.
