Dinner for 1. Creamy tuna and egg salad
I love tuna salad. Made with the best tuna available and mixed with eggs and cucumbers, it is one of my favourite summer salads. Usually, I prepare it with a simple olive oil sauce, yet this time, I craved something more creamy. Perfection on a plate.
Boil two hard-boiled eggs.
Wash lettuce and put it into a bowl. Add some cucumber slices.
In a blender, add half of the canned tuna you will be using. Add 1 small garlic clove, 1 egg yolk, 1 anchovy, salt, pepper, and 1/3 tsp Dijon mustard. Add some extra virgin olive oil and blend to a creamy sauce. If it is too thick, add either more oil or some water. When ready, taste for salt.
Mix the sauce with the lettuce and cucumber and put on a serving plate. Top with the rest of the tuna and the other egg yolk. Sprinkle with freshly ground pepper (green or black) and serve.
