Dinner for 1. Borlotti beans, tomatoes and mozarella
Peel beans (Borlotti in Italian and Coco in French) and boil them in slightly salted water, adding 1 garlic clove and 5 sprigs of thyme (which helps us digest the beans better and gives them an excellent taste). When ready, drain.
Mix beans with harissa paste (as much as you feel comfortable with) and some freshly ground pepper. Add to the plate, top with tomato and mozzarella, pour over some extra virgin olive oil, sprinkle with sea salt, and top with basil. Serve.
