Dinner for 1. Broad beans and tomato on toast
Left with a whole loaf of pain de mie or shokupain (from Antoinette), I was eager to finish eating it in the morning and to accompany my dinner dishes. I must admit, a week later, I still had a piece in the fridge to finish.
This dish was the first meal I shared with myself during this month of living alone, and I must admit, it was a suitable start, as I was eager to cook these beans already a few days earlier, yet no one desired them.
For preparation, peel and boil the beans as much as you would eat them. I had 500 g unpeeled, which resulted in a minimal amount yet sufficient for my dinner. When done, strain and cool a bit.
Mix the beans with one tomato (cut into pieces), some canned tuna, 1 tsp of capers, smoked or simple black pepper, 1 tsp chopped parsley, and some chopped salted lemon (preserved lemon). If you do not have the latter, use some lemon zest. Taste for salt.
Toast one slice of bread in a toaster or buttered pan, and when ready, place it on a plate and top it with bean salad. Serve.
